Carolyn Sue Davis Varnes

Carolyn Sue Davis Varnes, age 88, passed away peacefully on June 3, 2025, surrounded by her loving family. Born October 3, 1936, to Arthur Davis, Sr. and Vera Davis, Carolyn spent her life pouring love into those around her—with open arms, a warm kitchen, and a heart anchored in faith.

She and her beloved husband, JC Varnes, built a life together in Apalachicola, Florida, where they raised their family and worked side by side in the oyster industry. Carolyn was no stranger to hard work. She spent countless days oystering and shucking oysters at the family business, Varnes Seafood. She was deeply rooted in her community and her church, faithfully attending Living Waters Assembly of God while in Apalachicola, and later, Bear Creek Assembly of God in Panama City after she and JC relocated there.

 

Carolyn was preceded in death by her husband, JC Varnes; her mother, Vera Davis-Lemieux; father, Arthur Davis; brother, Arthur “Red” Davis; and sisters, Merle Marshall and her cherished twin, Gwendolyn Davis.

 

She leaves behind a legacy of love and laughter in the lives of her children: Virginia Varnes Thomas (Bill), Linda Varnes Hughes (Timmy), and Van Varnes; her grandchildren, Bill Thomas (Laura), Erica West (Mike), Celeste Love (Chris), Dustin Long (Casey), and Candace Varnes; brother, Ronnie Davis (Dollie); sisters, Janice McLeod and Bernice Miller; and 15 great-grandchildren. She also leaves behind a host of nieces, nephews, extended family, and dear friends.

Carolyn had a natural wit that brought joy and laughter wherever she went. She celebrated life’s big and small moments with her family. Her love for Jesus and her family defined her life. Her full-course meals fed more than just stomachs—they were acts of love served from the heart. Her children still remember her signature phrase, “Wait till your daddy gets home”—a warning that was given so they would behave.

 

She had a childlike joy and sense of adventure that made her a favorite among her grandchildren, whether she was skating with them, going down big water slides, or getting excited for the state fair. Carolyn loved her coloring books, cheering for her Florida Gators, and never missed a wrestling match with her husband by her side.

 

For the past three years, Carolyn resided at The Courtyard in Marianna, Florida, where she was lovingly cared for by an exceptional staff that treated her like family. Her final days were surrounded by the compassion and grace of Vitas Hospice Care, and her family is forever grateful for the dignity and comfort they provided.

 

A viewing and visitation will be 1:00 PM EST followed by a funeral service at 2:00 PM EST on Thursday, June 12, 2025 where we will gather at Living Waters Assembly of God Church in Apalachicola, FL to celebrate her beautiful life and the lasting imprint she leaves on our hearts. Reverend Scotty Lolley will be officiating. 



Interment will follow in Magnolia Cemetery in Apalachicola, FL with Marianna Chapel Funeral Home directing.

 

Pallbearers will include Bill Thomas, Dustin Long, Chris Love, Mike West, Matt Thomas, and Austin Bullard. Honorary Pallbearers are Ethan Long, Zack Thomas, Will West, Bryce Long, Dylan Love, Joey West, and Dustin Long.



Carolyn Sue Davis Varnes was a woman of unwavering love, simple joys, and quiet strength. She made the world brighter with her smile, her food, her adventures and her faith. She will be missed deeply—but never forgotten.
